This wine really shines on the palate, with fleshy apple and lemon juice reflecting sunlight. The core of acidity hums through notes of greengage plum, white cherry, and tarragon sprinkled on the finish. This is a wine with three-dimensional texture.

Hand-harvested, a light crushing is done by foot to kickstart fermentation which occurs in amphora for 20 days. No commercial yeasts, enzymes, or other additives are added during the winemaking process. After fermentation is complete, the wine is aged in amphora for 6 months before bottling. A small amount of sulfur is added at bottling. The wine is bottled unfined and unfiltered.

Farmed biodynamically. The grapes are sourced from a small 3.5 hectare plot in Valmaggiore in the Roero. The vineyard is incredibly sandy and gets tons of sunlight. The intense sunlight allows the grapes to fully ripen early in the season.
