A gorgeous Dolcetto with notes of blueberries, blackberry compote, dried thyme, iron and rosemary. The palate is juicy and bright with a vibrant acidity that morphs into light and raspy tannins with an earthy, herbal and slightly floral finish.
Hand harvested; a light crushing is done by foot to kickstart fermentation, which occurs in amphora for 20 days. After fermentation is complete, the wine is aged 6 months in amphora before bottling.
The grapes are sourced from a small, 3.5 hectare plot in Valmaggiore in the Roero. The vineyard is incredibly sandy and gets tons of sunlight. Biodynamic farming.
