This Gamay has the freshness of the new world, and the structure of an edgy old world Gamay. Like when you bite into a rope Satsuma plum – lush sweetness, a little acid and some tannin. She’s briny and delightfully herbal. Perfect now, perfect in many, many years down the road.

Gamay was harvested in three stages. All three picks underwent 100% whole cluster fermentation. Throughout primary fermentation, the grapes received a thoughtful balance of gently foot treading and pourovers. Each fermenter was pressed after 16-19 days on skins. Fermentation began with a tough of carbonic maceration before transitioning into maximal extraction cap management methods. Several rounds of foot treaditn and gentle handling ensured that no berry was left un-squished after primary fermentation. After a light pressing, the wine was aged in neutral French oak barrels before being bottled unfined & unfiltered.

This wine is made of grapes from both Martian Ranch Vineyard and Shokrian Vineyard in Los Alamos, California. Martian Ranch is Demeter Certified Biodynamic, and Shokrian Vienyard has been farmed organically for many years. Both of these vineyards appear sandy at the surface, but there is a rich loamy clay about 3 feet below the surface in pickets of these blocks.
