A joyous midpalate with a seamless integration of all three varieties. Like mastering a white peach Pavlova decorated with orange blossom and pretty pansies.
Marsanne and Viognier were brought to the winery and pressed directly to tank. A week later the Roussanne was harvested, splitting the pick into direct press and foot-tread components. Both picks settled overnight and the juice was gravity racked off its heavy lees into neutral French oak barrels, which enjoyed a long and slow fermentation. The wine aged on its fermentation lees, completed malolactic fermentatioin and was blended together to taste. It was then bottled unfined and unfiltered.
