Aromas of creamy lime panna cotta, green pear and smoky flint tones. Light-bodied and silky, the palate is tight and focused yet concentrated with a long, ethereal finish.
Grapes were whole cluster pressed at low pressure for four hours then settled at 45F for 3 days. The juice was then racked to barrels of varying sizes and fermented for 35-40 days with minimal battonage. Juice underwent full malolactic fermentation and was aged on the lees for 12 months in 30% new French oak barrels.
Fruit is sourced from Bethel Heights Vineyard, Justice Vineyard and Hope Well Vineyard and is Certified Organic.
