The depth and complexity, the subtle aromas of flowers, herbs, forest and earth, along with the delicate silky texture, all reflect a wine utterly unique in the world of Napa Cabernets.
The grapes are allowed to ferment with their native yeast, maceration is gentle, and likewise the elevage in barrels is gently and progressive. Ultimately, after almost two years, the wine is bottled with a light egg-white fining and no filtration.
100% Cain Vineyard. The soils here are formed almost entirely from sedimentary rock, some 140 million years old. The poor clay, shale soil is a key factor contributing to the aromas and texture of the wine. The elevation (1400ft-2100ft) and exposure to the cool, moist winds from the Pacific contribute to the delicate freshness and long ageability of the Cain Five.
