Notes of yellow fruit, Mediterranean herbs, and saline notes. In the mouth, it is mineral, and dry.
All the grapes are picked by hand at the same time, but go through two separate vinifications.The grapes from the younger vineyard are pressed immediately off their skins, while the 50 year old vines see one full day of skin-contact. Both vinifications occur in stainless steel. After fermentation the two are combined and aged for a year in stainless steel. No commercial yeasts are used and the wines are bottled unfined and unfiltered.
The Calogero Caruana farm is located above the Torre Salsa Reserve in Monteallegro, in the province of Agrigento (Sicily), less than 2 km from the sea. The soils are nearly all sandy with a touch of clay and limestone. The grape varietals grown are all native. Calogero's commitment lies in producing an artisanal wine that reflects the characteristics of the soil, the natural environment and each vintage is represented based on its unique characteristics.
