A fresh and elegant wine, with a unique personality. Spicy and elegant nose with hints of small fruits and hazelnuts, on the palate it demonstrates a characteristic acid supported by minerality.
The grapes are destemmed and placed with the skins in the fermentation tanks. Once the fermentation has started, it still remains to ferment with the skins for 3-4 days. Then it is separated from the skins and fermentation ends in steel tanks and barriques that are not new (for about 10%). Spontaneous fermentation with indigenous yeasts, no use of fermentation adjuvant. SO2 is not used on grapes or in must.
Grown in calcareous, clay soil, mineral-rich. Vines were planted in 1999.
