A cuvée focused on fruit, and digestibility. Delicate in color and on the palate. An exuberant youth, followed by an orderly and complex length.
Fermented with native yeasts in a combination of stainless steel tanks and neutral oak. All grapes are fermented separately and blended before bottling. Aged 24 months.
A reflection of the grape varieties in the area. A blend of all terroirs, with two years of harvest depending on the vintage. Jérôme Bourgeois-Diaz farms 7ha of vines that average 35 years of age in the clay and limestone soils the region is known for. Jérôme is deeply committed to biodynamic farming, having gained Demeter certification in 2015.
