This wine delivers notes of cranberry, sour cherry, grapefruit, green strawberry, guava, and wet volcanic stone. Tight bubbles with a brisk mouthfeel.
Separate base wines were made from each vineyard. Each base wine was whole cluster pressed and settled overnight. The color from this rosé comes from 2 saignée blends that were made: Pinot Noir from Cattrall Brothers Vineyards (34% of blend) which was destemmed and cold soaked for 4 days before pressing. Pinot Gris from Winter's Hill Vineyard (15% of blend) which was destemmed and cold soaked for 48 hours before pressing. After pressing, the wines were settled and fermented with Quartz yeast in neutral oak. Base wines remained on the lees for 9 months.
