Cuvée One expresses the soul of Oregon sparkling through its racy acidity, dark fruit and stony finish.
Separate base wines were made from each vineyard. Each base wine was whole cluster pressed and settled overnight. Afterward, the wines were fermented with native yeast in 75% neutral oak and 25% stainless steel barrels. Base wines remained on the lees for six months. Secondary fermentation was done with Spark yeast before spending 32 months on the lees.
