The grapes are pressed and left to ferment with the skins for 15 days in stainless steel, the wine is then aged in stainless steel until bottling. Fermentation is spontaneous with native yeast. Other than a small dose of SO2, there are no additives, interventions or manipulations.
Damoli a small, family-run farm is situated in Negrar, near Verona, in the heart of Valpolicella Classica. The vineyards are situated at 200 meters above sea level. The vines are trained in the classic Pergola Veronese method. Organically farmed.
