This wine displays a raw and wild interpretation of Cabernet Sauvignon. The juxtaposition of pH and brix established a wine with softness, with a high percentage of fine tannin which replaces acid structure as the main core of angularity.
After spontaneous yeast fermentation, the grapes were pressed to barrels. After 1 month, wine was racked off lees and aged 15 months in neutral oak (80%) and new American oak (20%). 100% unfined & unfiltered.
Demeter certified biodynamic. 2018 was a warm year for the Red mountain AVA.
