A concentrated and very expressive Mondeuse. A constant freshness on the nose. The mouth is juicy with delicate tannins well tamed by the winemaker's aging. Black pepper and black fruits characteristic of this grape variety with a hint of violet.
Whole bunch maceration takes place for about ten days in a vat. Fermentation with indigenous yeasts. Aging is carried out in wooden tuns.
Located in Chignin in Savoie, the estate was created in 1987 by Pascal Quénard's father. After cultivating his own vines for a few years, Pascal took over all the vines in 2010. The 6 Ha farm has been certified organic since 2013 and Demeter since 2020. Noé, his son, now also works on the estate. La Sauvage comes from a plot in Bourdeaux on a clay-limestone terroir. Demeter certified Biodynamic.
