Aromas of cherry, a touch of oak, cocoa, mixed spices, earth, and some tart cranberry. The palate is just shy of moderate in weight with dark cherry, spices, cocoa, and an earthy cedar note.
Fermented in 1000 Gallon open top SS Fermenter. Native fermentation in stainless for 18 days and pressed into neutral Burgundy barrels to finish fermentation. Aged 20 months in reductive management and bottled un-fined and unfiltered with a minimal dose of SO2.
Farmed with minimal intervention by the 5th Generation of the Del Barba Family.
