Velvety texture and some raw bees wax aromas. Faint notes of guava, pineapple, lemon meringue, and a kind of earthy sandy aroma. The palate shows more bruised apple, Asian pear, rainier cherry, and fresh ginger on the crisp and brisk finish.
25% fermented on skins in stainless steel tank, 30% 48h maceration to press, and 45% direct to press. Aged in neutral Burgundy barrels 10 months. Bottled unfined and unfiltered.
Julien’s wife Alli was born on this farm, and the Cecchini Family had been farming this land in Knightsen for nearly a century before it was sold in 2021. After farming this vineyard organically for the past 5 years, they are working closely with the new owners to maintain those standards. Grown in a patch of delhi sand X sandy loam, this 25-year-old Malvasia planting continues to stun each season with its resilience and consistency.
