Fermented with native yeasts in 80% cement vats / 20% old oak barrels, followed by 6 months on the lees in neutral barrel.
From soils rich with silex, limestone and cailleux. Sourced entirely from the vineyard La Hunaudiere located in Saint-Cyr. Fabien Duveau is the 8th generation of his family to make wine in Samur-Champigny. Farming organically and cultivating biodiversity in and around the vineyards are integral to Fabien’s aim of making wines that express both “the complex nature of the land and the know-how of its winemakers.”
