Gentle pumpovers were used during fermentation to optimize extraction. Additions focused on yeast nutrients as they were needed (our winemaking is intentionally “lo-fi” with a goal of eschewing watering back and acidulation); maceration was two weeks on skins. The wine was bottled after aging fourteen months sur lie in neutral French oak (500L puncheon).
The 2021 Spenker Carignane was sourced from own-rooted vines planted in deep sand near the Mokelumne River. Originally planted by Joseph Spenker in 1900, these head trained vines are still dry farmed 120 years later and frequently produce clusters that are atypically small for the variety. Burns is the fifth generation of his family to farm this special place.
