Viscous and layered with notes of lemon pith, golden apple, bergamot, beeswax, walnut and dry straw.
Fermented half the grapes on the skins for 10 days, resulting in a rich and textured wine, while pressing the other half immediately to bring freshness and verve. Aged in concrete egg (47%), neutral oak (15%), clay amphora (23%) and stainless steel (15%).
Named Les Collines after the French meaning ‘the foothills,’ the vineyard lies at the base of the Blue Mountains in Walla Walla, Washington. They are a LIVE certified sustainable and salmon safe vineyard, practicing low input farming with a goal of having a minimal impact on the environment.
