The grapes were harvested and fermented in stainless steel. The wine was aged in barrel for 6 months before bottling for secondary fermentation. It was aged 15 months in bottle before being disgorged by hand.
Escolle Vineyard benefits from an idyllic cool climate location. The dominant soil type is Chualar Sandy Loam with a greater composition of decomposed granite as the bench rises, and alluvial deposits found in lower elevations. The soils drain well and hold a proper amount of natural nutrients allowing for a healthy sustainable vineyard. The site is currently transitioning to organic farming practices.
