A zesty and refreshing Sauvignon Blanc with tropical fruit and citrus aromas, underscored with a palate that is supple and mineral.

Aromas of tropical fruit, citrus, grapefruit, pear, white flowers. Invigorating flavors of lemongrass, ripe pear and nectarine. The palate is supple and zesty, balanced with a flinty, mineral quality that adds a refreshing tang and texture.
Direct press and cold racking of the gross lees for 18 to 24 hours. It is fermented in stainless steel tanks and concrete vats and aged in stainless steel and fiberglass on the lees. After malo, a racking is done, and 1 gram of SO2 is added per hectoliter. A light earth filtration is done before bottling and 1 to 1.5 grams of SO2 per hectoliter are added at bottling.
The wine is made from purchased fruit from two organic suppliers. The first is in Bourré on clay and flint. The second is in Noyers-sur-Cher with soils of deep, draining soils. Average age of vines is 30 years old.
