A concentrated wine reminiscent of drinking a good classical Rhone Valley wine.
Grapes were hand-harvested and co-fermented as whole clusters in neutral oak barrels. The grapes spent 21 days on the skins before being pressed directly to barrels. Wine was aged on the lees for 24 months before being bottled unfined & unfiltered.
Hiyu Wine Farm is a fully-functioning 30 acre biodynamically farmed estate that also features fruit orchards and animals. The fruit for this wine came from a half-acre parcel of Alpine varieties based on Syrah and including all of its genetic relations from the foothills of the Alps.
