Remarkable depth and intensity, really structured wine, fruits like pear and quince hang around an energetic core. Mildly oxidative note recalls Chardonnay from the Jura.
Grapes were whole-cluster pressed cold and went to barrel without settling and tucked into a cool spot to ferment. Malolactic started before primary fermentation was finished. No commercial yeasts or bacteria were used.
Vineyards themselves are East/Southeast facing with both volcanic and ancient marine soils and 100% organically farmed. Fruit was harvested September 15, 2017.
