Squarely in the light-bodied, chill-able red category. Light enough to drink all day and stay refreshed, but with enough spice, texture and depth to stand up to any fresh warm-weather cooking.
Spontaneous fermentation in hand-crafted amphora. 13 days whole-cluster skin-contact. Aged 10 months in amphora. Bottled unfined & unfiltered. Nothing added or taken away.
7 days 100% whole cluster carbonic, followed by 7 days of gentle foot treading. Grapes are then pressed off and wine is left to finish primary in neutral oak and cuve tanks.
