A pan-alpine expression that stylistically blends the fresh and savory wines of the Jura, with the depth, texture and spice of higher elevation alpine regions like the Savoie and Alto Adige.
100% whole cluster. Grapes undergo sealed top carbonic maceration for 7 days, followed by 7 days of traditional red wine primary fermentation where the ferments are punched down by food treading once a day to encourage extraction (usually another 7 days). Once the ferments go dry they are submerged in a cap state, where the skins and stems still get to infuse with the juice, but completely cut off from oxygen and therefore safe from spoilage. The ferments undergo extended maceration for anywhere from 30-90 days until the tannins have fully integrated into wine, then are pressed off into neutral oak.
The Mondeuse, Blaufränkisch, Poulsard and 10% of the Trousseau comes from the Trinity Alps on iron-rich sandstone and granite. The Pinot Gris and Pinot Noir come from the Siskiyou Mountains of the Rogue Valley, and due to a bad crop from their normal Trousseau source, they luckily found some Trousseau in Mendocino to fill things out.
