Precise and mineral, with lemon zest, green apple and white peach layered over chalk, almond and subtle brioche. The extra brut dosage keeps it taut, vibrant, and focused with a long saline finish.

Fermented in stainless steel and aged on the lees until bottling in April following harvest. The wine was aged an additional 64 months en tirage prior to disgorgement.

Vignier’s holdings are now in the Grand Cru Villages of Cramant, Chouilly and Oiry, as well as some parcels in the Côte de Sézanne. Nathalie first worked as an insurance adjuster for wineries in Burgundy and Champagne and was called home to take over the estate by her father. She is slowly aligning the estate to her philosophy: higher ripeness, a return of oak to the cellar and no use of herbicides or pesticides. Les Fourches vineyard, where the fruit from this wine is coming from, is Certified Sustainable by Socofret.
