Varieties: 60% Sauvignon Blanc, 40% Chardonnay
Location: Edna Valley, CA
Alcohol: 12.5%
Think candied kumquats, lemon verbena, & citrus meringue.
Both varieties were harvested on September 29th, 2021. The grapes were foot tread to soak on skins overnight and then whole bunch pressed the next morning. The juice was fermented with native yeast in neutral French oak barrels, then aged on lees for 7 months. The Sauvignon Blanc went through full malolactic fermentation over winter while the Chardonnay went through partial malolactic fermentation to preserve its natural acidity. The wine was racked for the first time to blend for bottling, without filtration.
The Oliver’s Vineyard is located on the Southwest side of Edna Valley on marimel sandy clay loam soils, 5 miles from the Pacific Ocean. The original vines were planted in 1991 to predominantly Chardonnay with a smaller Sauvignon Blanc planting. Oliver’s Vineyard is currently in pursuit of an organic farming certification through CCOF.
