Lemon peel, white flowers, and crushed stone rise from the glass with lifted, textured energy. Expect layered texture, mineral tension and unforced freshness.
Grapes were harvested in two separate picks, then were foot tread at the winery to soak on the skins overnight before being whole bunch pressed the next morning. From the press pan, the juice was collected into old French oak barrels and fermented with native yeast and bacteria. The wine aged on lees for 7 months, then was racked for the first time to bottle, without fining or filtration. Minimal sulfur was used at bottling.
Stolpman Vineyard is a Demeter certified biodynamic vineyard in the Ballard Canyon AVA of Los Olivos in California. The vines are rooted into a limestone outcropping that help the grapes retain naturally high acidity levels during ripening.
