Red apples, fruit and skin, toasted corn and a buttery finish.
Fruit was hand harvested and whole-cluster pressed to tank with ambient yeasts. Barrel fermented in neutral French oak barrels, receiving battonage after primary fermentation. Partial malolactic fermentation occurred naturally and the wine spent 8 months in barrel to age before being bottled unfined and unfiltered.
Spear Vineyard Estate is a CCOF certified organic vineyard on tierra loam soils.
