A fresh expression of Pinot Noir; ripe cherries, red berries and a hint of baking spice from limited oak aging. Bright and mouth-watering.
95% destemmed and 5% while crushed to open-top fermenters on ambient yeast. After primary fermentation wine is racked to neutral French oak barrels and undergoes full malolactic by naturally occurring bacteria, then ages for up to 8 months in barrel. Bottled unfined & unfiltered.
Vineyard is CCOF certified organic in Tierra loam soil.
