A fresh expression of Pinot Noir. Ripe cherries, red berries, clove, black tea and a hint of baking spice from limited oak aging. Bright and mouth-watering.
Hand harvested, 95% destemmed and 5% whole crushed to 1.5 ton open-top fermenters with no SO2 added and a 3-day cold soak. After primary fermentation wine is racked to neutral 228L French oak barrels, then returned to tanks for settling. Undergoes full malolactic fermentation by naturally occurring bacteria and matured 8 months in barrel.
