Light to medium-bodied, red-fruited with a nose of dark cherry, black tea and subtle spice. The palate has notes of brandied cherry and savory herbs.
Hand harvested, 95% destemmed and 5% whole crushed to 1.5 ton open-top fermenters with no SO2 added and a 3-day cold soak. After primary fermentation wine is racked to neutral 228L French oak barrels, then returned to tanks for settling. Undergoes full malolactic fermentation by naturally occurring bacteria and matured 8 months in barrel.
