A majority of the grapes are whole-cluster pressed and settled overnight. The juice is then racked off the sediment the next morning into a clean tank, where a small amount of sulfur is added to inhibit bacteria from consuming the sugar. A smaller percentage (10%) of the grapes are destemmed and fermented on the skins. After primary fermentation is complete, the skins are pressed, and the wine is settled overnight, then racked to barrel for aging. The wine was aged in barrel for ten months, then racked to tank and prepared for bottling.
Coquelicot Vineyard is a CCOF certified organic vineyard and sits just below the historic Mission Santa Inés in Solvang, California. Planted in 1997, it is owned and farmed by the Rosenson family.
