Fermented in stainless steel tanks at 56F for 20 days. Racked off heavy lees and sterile filtered to ensure stability without the need of chemicals or additives.
Liwa is the Miwok name for water, and this thirst-quenching Sauvignon Blanc is made in collaboration with Inizi Winery (Guerneville, CA). The fruit comes from a sustainably farmed vineyard in the Russian River Valley AVA, on the boarder of Dry Creek Valley and just on the edge of the Russian River itself.
