Intense dark purple color. A slight anise aroma at first, which then transiJons into blueberry, tobacco, and spice. The tannins are so_, round, and mouth filling. The acid is well balanced, enough is there to have this wine age for 10+ years.
This Cabernet was fermented in closed top tanks at a mild temperature. The goal was to achieve a restrained lively Napa Valley Cabernet. Minimal intervention was taken during the fermentation (via inoculation) and once the desired tannin level was reached it was pressed. Pressing this wine around 5 Brix made for a lighter more focused Napa Valley Cabernet, which is in dark contrast to the vast majority of wines coming out of The Oak-Knoll District. Wine was aged in 100% neutral French oak barrels for 8 months.
Oak Knoll District lies at the southern end of Napa Valley where the growing season is longer. The two sustainably farmed sites that were selected for this wine are young vineyards coming into their own. The deep soils are made up of fine, gravelly clay loam on the valley floor.
