A vertical sparkling wine that pulls yeast into the bottle to highlight the grape juice and compensate for the acidity, avoiding the use of sugar. An ample and balanced wine with aromas of ripe white fruit, white flowers, citrus and notes of crusty bread. An elegant salty touch gives it a long and persistent finish.
Hand-harvested. 19 days maceration with the skins, spontaneous fermentation with no added sulfutes. Unfiltered, unclarified 3 months with fine lees and 3 years of aging in the bottle.
Organically farmed with biodynamic principles in clay-limestone soil. The property has been owned by the Vedrell family since 1918 and has been growing grapes and producing wine on and off since then. The estate has unique characteristics to be able to make long-aged cavas due to high calcareous component of its terroirs, its orientation and the vineyards - over 60-years-old and provide high quality grapes with low yields.
