Fermented in tonneaux and then bottled to make the second fermentation, where it stays on the lees for 30 moons.
Nicola is from a wine producing family, but after being introduced to the natural wine world he decided to start producing wine with as little manipulation and intervention as possible. His Chardonnay and Pinot Noir vineyards never see any chemical treatments, instead Nicola sprays biodynamic preparations through the season. Using biodynamic farming practices to produce healthy biodiverse vineyards of the utmost importance to Nicola.
