Aromas of orange blossom, mango and citrus with a palate of juicy pear, lemon zest and almonds.
Hand-harvested on their perspective pick date and chilled at 35 degrees overnight. Both varieties were destemmed, the Chardonnay was immediately cold pressed and Pinot Blanc was put into tank with its skins. After 7 days of skin contact, the fermenting Pinot Blanc was drained off the skins and pressed to a new tank to finish fermentation without the skins. The fermentation spontaneously started with native yeast and fermented 50-60 degrees. After fermentation, both wines were aged on their lees until being blended for bottling.
The Pinot Blanc grapes came from Bohemia Manor Farm, and Chardonnay grapes were from Cool Ridge Vineyard.
