This extra brut is golden in color, concentrated with red berry notes lifted by citrus, creamsicle and nectarines. Juicy with Pinot Noir structure while remaining bright and fresh on the palate.
Fermented with native yeasts, half in neutral barrique and half fermented in enamel tank. Elevage continues a minimum of 6-8 months before the wine is blended with the previous vintage to be refermented in bottle using the Method Fabrice Pouillon.
Grand Vallée is an expression of the Vallée de la Marne through the Pouillon lens. It is a blend of all of Pouillon’s holdings relative to what those vineyards are comprised of. Fabrice is dedicated to the vitality, energy and health of his vineyards. In 2003, he began the work of conversion to organic viticulture and today he incorporates biodynamic principles into his work.
