Incredibly fresh and inviting with aromas of redcurrant, cranberries and mountain herbs. The palate is pure and elegant, with notes of raspberries and hints of earth and spice.
All lots were destemmed into open top stainless steel fermenters. Manual punch-downs and pump-overs. Extended skin contact, ranging from 3 to 4 weeks. Spontaneous malolactic fermentation in casks. Aged 12 months in 20 HL casks.
White Springs Vineyard (estate) 75%, 16 Falls vineyard (estate) 25%. Honeoye loam over limestone (White Springs), Clay/loam over shalestone (16 Falls.)
