20% whole cluster, 2 batches of different clones of Syrah, basket pressed and aged in neutral oak. Does not block malolactic fermentation, minimal amounts of SO2.

Demetria Estate is a family operated biodynamic and sustainably farmed vineyard in Los Olivos, CA. They work closely with Ryan Roark, who also oversees the vineyard – one of the first in Santa Barbara County to be farmed biodynamically.
