Whole-cluster direct-pressed after a brief foot-stomping and maceration in the press. Racked to stainless-steel tank for native fermentation. Slow and steady fermentation over 1 month. Bottled after 6 months. Unfined, lightly filtered, with minimal SO2.
Red Willow, located on the western edge of the Yakima Valley and just east of the Cascades, is one of Washington State’s most distinguished vineyards. The Cab Franc for this wine is from a newer block at the vineyard. It sits on southeast-facing, sandy loam soil at 1,000 feet elevation.
