A hazy pink in the glass, this wine delights with its lively acidity, bright red fruit flavors and a subtle minerality. Aromas of cherry, baked pastry, chalk and cola. There’s a hearty mousse to the palate. A refreshing and vibrant wine.
This wine is made using the Methode Ancestrale technique. Grapes are food tread for flavor and color followed by whole cluster pressing and then fermented in neutral French oak barrels with native yeast. It is bottled just weeks later at the very end of fermentation to capture the natural bubbles in the bottle. The wine is aged on lees in bottle before being riddled, disgorged, corked and caged, all by hand.
From the Topotero Vineyard, located in Avila Beach, San Luis Obispo County. The vineyard is farmed by Ben Taylor using organic practices on his family’s home ranch just over a mile from the Pacific Ocean.
