Apple blossom, honey drizzle and crushed stone aromas make for a clean and direct nose. The palate is energetic and complex, showing lime leaf, ginger-lemon tea and light herb flavors.
Each pick was pressed and fermented separately. The grapes were pressed in a 4 ton Euro Press, then the juice was collected in tank before being transferred to neutral French oak barrel barrels for native yeast fermentation. The wine then went through native malolactic fermentation, aging on the lees for an extended time of 19 months. The wine was racked together and then blended with an addition of 10% solera for the first time right before bottling. Unfined & unfiltered.
Fruit is from Rancho Ontiveros vineyard in the Santa Maria Valley AVA of California. These vines were planted in 2006, and the vineyard is on well draining sandy loam soils, planted at 700 feet elevation. The grapes were farmed practicing organic farming techniques.
