A refreshing and lively sparkling, with a palate of strawberry fruit and chalky minerality lifted on a hearty mousse. Bright and vibrant with a rich, frothy mouthfeel and a subtle hint of floral notes.
The grapes are foot tread followed by whole cluster pressing and then fermented in neutral French oak barrels with native yeast. It is bottled just weeks later at the very end of fermentation to capture the natural bubbles in the bottle. The wine is aged on lees in bottle before being riddled, disgorged, corked and caged, all by hand.
Topotero Vineyard, located in Avila Beach, San Luis Obispo County is farmed by Ben Taylor using organic practices on his family's home ranch just over a mile from the Pacific Ocean.
