A 50/50 coferment, with fermentation in open top fermenters for 10-14 days. Their press is a 1906 wood press and ensures a light touch.
Sky Vineyards has been making estate dry farmed Zinfandel and Syrah since 1972. Wines are made with minimal inputs, and by hand on an estate that has been run by solar power since the early 80s. The farming has been dry farmed and they have been using strict organic and regenerative practices for over 30 years. The estate site atop Mt. Veeder at 2300 feet in the southern Mayacamas Mountains with an eastern exposure, which captures the warm sunny mornings in Napa and helps protect the vines from the late afternoon sun.
