Inspired by David Chang’s sense of umami. Presence of botrytis (Noble Rot) concentrates the flavors on the vine. Strawberry, Jolly Rancher, honeydew melon flavors with will develop more savory umami notes with more time in the bottle.
Fermented with wild yeast from the vineyard site, fermented and aged in neutral oak barrels. The fruit has consistently come with botrytis (Noble Rot), which concentrates the flavors when the grapes dehydrate on the vine and get fuzzy from the (good) mold.
Crow Valley Vineyard is located in South Willamette Valley, near Eugene. It’s composed of Bellpine soil, dry-farmed and minimal intervention farming practices.
