Light yellow in color with a nose of citrus and tree fruit on the nose with green apple and pear on the palate. Crisp and light, best served chilled alongside anything salty and fatty.
Manual harvest for all vineyards. Wild yeasts are used from each individual location to ferment the wines. Varietals are fermented separately in neutral oak (no steel) and blended after fermentation is complete. Aged 5 months in neutral oak.
Grow Valley and Gimpl Hill for Riesling; Ankeny for Pinot Gris; Helvetti for Viognier. All the vineyards are farmed the same: organic practice, dry-farmed, no pesticides.
