This wine is light, savory, layered and subtly complex. Fans of Burgundy Pinot Noir will find something familiar. Bright, clear, light brick in color. Notes of black cherry, raspberry, with a savory lingering finish. Sings with duck or cassoulet. Give a quick decant for maximum expression.
The Grenache was divided into separate 3/4 ton bins for open top fermentation. Fermentation occurs naturally with indigenous yeast, with no additions or cold soak, one punch down a day. After fermentation, the wine is pressed into neutral French oak barrels, without settling, where malolactic occurs naturally. The wine remains on the lees for 6 months, unstirred, until racking begins 2 months before bottling. The final lot was assembled and then bottled unfined and unfiltered. Aged 9 months in barrel.
The vineyard is organically and regeneratively farmed. Weed control is done by the donkeys and goats in the winter, who also organically fertilize while grazing, which is the only amendments the vineyard receives. Spraying is very minimal, and grapes are hand-harvested. The vineyard is called “Arya and Austin’s Vineyard” as its also where their 2 Aussies run and play.
