Elegant and aromatic, simply ethereal. Expressive aromatics, soft structure and spice notes. Strawberry, raspberry, red currants and ripe plums. Serve lightly chilled in a Burgundy glass when possible.

100% whole cluster, lightly foot tread, then fermented whole cluster (carbonic-esque) in small vessel ¾ ton picking bins. Fermentation occurs naturally with indigenous yeast, with no additions or cold soak. Once fermentation is complete, the wine was gently pressed to neutral French oak puncheons, without settling, for 7 months elevage. The wine remained on heavy lees for 5 months, racked twice for bottling, with no fining, filtration, or additions other than a small amount of SO2.

One third of the 75 total acres of Cinsault planted in California are in Bechtold Vineyard. Planted in 1886, the Bechtold vineyard is the oldest known planting of Cinsault in the world. Planted in sandy soils around canals, the phylloxera root louse can’t survive in abrasive sand, so it was unimpacted by global phylloxera replanting. The vines are dry and organically farmed, and of course head trained (vineyards weren’t put in “clotheslines’ back then. Their age allows them to ripen their low yield, modestly respite the heat, with roots going down over 30 feet.
