This wine is light, savory, layered and subtly complex. Fans of Burgundy Pinot Noir will find something familiar. Bright, clear, light brick in color. Notes of rhubarb and strawberry.
Native fermentation occurs naturally in open top fermenters. After fermentation, the wine is pressed into neutral French oak barrels, where malolactic occurs naturally. The wine remains on the lees, unstirred, until racking begins 2 months before bottling. The final lot was assembled and then bottled unfined and unfiltered. 11 months total elevage.
